Several years ago, my school's science coach applied for a grant and purchased rockets for our fifth graders to launch. Although he moved on to another school, I have made it a fifth-grade tradition the last two years (and I plan to continue) to have students build and launch rockets as part of their science experience. Viking rockets are great because the students can design the fins the way the want too. They can have three, four, or five fins in various positions to give them a little ownership in their build and adds a fun variable to discuss and test. Usually, we launch in April, but this year we are blasting off at the end of March and I can't wait.
